Miner gives you an extra ore per node. Geologist gives you a 50% chance of finding 2 gems. The Miner is better because you can upgrade your tools faster.

It's really up to the individual which Mining Profession they choose. The two branches will each serve a player well, though they have some advantages over each other in different situations. Anyone in the early game might get more of a benefit from choosing Miner at Level 5 and Prospector at Level 10.

The Statue of Uncertainty can be used to change your professions. It requires you to make an offering of 10,000g at the shrine located inside the sewers on the opposite end of Krobus. This can change things such as Mining or Fishing skills.
